1.) Cut whole cauliflower head into roughly 4 equal sized steaks, cutting from top to tail
2.) Preheat oven 180 degrees
3.) Place frying pan on heat and allow to heat the pan till it is hot +- 2-3 minutes.
4.) Add the olive oil, then gently place cauliflower steaks into pan. Cook on high heat so the steaks are golden brown on each side. Season each side with salt and pepper,+- 3 minutes each side. Add butter and sunflower seeds, along with fresh thyme, bruised garlic cloves.
5.) Place in oven in a baking dish and allow to cook for roughly 10 - 15 minutes.
6.) Have a saucepan on with hot water and plenty of salt.
7.) Cook asparagus, then mange tout and add peas at the end.
8.) Strain water off, add back to pan, add a knob and dash of olive oil and season with salt and pepper.
9.) Place green vegetable melange off centre of plate, Place cauliflower steak and sunflower seeds onto of green vegetables.
10.) Drizzle Bottings Pineapple, vanilla and chilli around dish.
11.) sprinkle chilli flakes around dish as desired.
12.) Optionally cook some fish or meat of choice to dish.
